2-minute raspberry & chocolate fontant mug cake.


dietary: dairy-free, gluten-free, low FODMAP, SIBO friendly, keto, vegetarian (vegan option).

prep time: 1 minutes.

cooking time: 2 minutes.

I first heard about mug cakes when I was living in Sydney, a year and a half ago, and became obsessed with them (I made one pretty much every day for a year). I went off them for a little bit, but now the months are getting colder the cravings come back and a raspberry chocolate fondant has got to be my favourite.

These cakes are low-FODMAP, keto, low-sugar and high protein. They’re great for after a work out, or just a lil puddin’ on a Sunday. I like to serve mine with Coco's Organic Coconut Yogurt or River Cottage Vanilla Yogurt.


ingredients:

dry:

1 tablespoon of almond flour

1 tablespoon of coconut flour

1 tablespoon of flaxseed

1 tablespoon of cacao

1 teaspoon cinnamon

a pinch fo salt

1/5 teaspoon baking soda or 1 teaspoon of apple cider vinegar

optional (for a sweeter pallet): 1 tablespoon coconut sugar


wet:

1 tablespoon of almond milk

1/2 banana

1/5 teaspoon of vanilla bean

1 egg (vegan option replace with alfalfa or egg substitute)

6 raspberries

x2 squares of dark chocolate (I like to use Vivani 100% or Montezuma 100%. Other favourite’s are Hu Salted Dark Chocolate or Ombar Coco Mylk)

optional: 1 teaspoon of hazelnut butter


  • Add all of your dry ingredients into a mug and whisk with a fork so that there are no lumps.

  • Next, add your banana, almond milk and vanilla into a bowl and pop into the microwave for 1 minutes. Check after 30 seconds, mix it together then pop it back into the microwave for a further 30 seconds.

  • Then, add the wet mixture to your dry ingredients along with the egg and whisk together using a fork. Make sure you whisk well, folding the mixture to get some air into it.

  • Once the cake mix is nice and smooth, mix in the raspberries.

  • Then, place the x2 squares of chocolate along with the optional hazelnut butter into the middle of the cake.

  • Pop your cake into the microwave for 2 minutes.

  • Once the 2 minutes is up, serve in a bowl with some yogurt.
