poached egg on sourdough with krispy kale, toasted seeds and smoked-tahini Mayo

dietary: low-FODMAP, vegetarian pescatarian, keto and vegan options.

Something a bit different to the usual “eggs on toast”. Total cooking time is about 15 minutes. I’ve added each recipe in order of when to do it to avoid the pressures of time management.

cooking time: 10-12 minutes.


ingredients:

2 handfuls of shredded kale

1 tablespoon of sunflower seeds

2 spring's of spring onion


  • Heat up 1/2 tablespoon of sesame oil in a pan.

  • Meanwhile, finely chop your spring onion.

  • Once the oil has heated, add if your spring onion & kale along with a pinch of salt & pepper. Cover with a lid for 3-4 minutes.

  • Once the times up, toss the kale and onions around then cover for a further 3-4 minutes.

  • Next, add in the sunflower seeds.

  • Keeping the lid off cook or a further 3 minutes. Stir frequently.

  • Fill up your kettle and boil some water.

  • Next, place the water into a sauce pan and pop on a medium heat.

  • Place your sourdough into the toaster whilst that’s boiling.

  • Once the water starts to bubble crack in your egg.

  • Allow to cook for 2-3 minutes before removing and placing on a tissue (to absorb your water - avoiding soggy bread!)


smoked-tahini mayo


dietary: dairy-free, gluten-free, low FODMAP, SIBO friendly, pescatarian, nut-free and vegetarian (vegan options).

prep time: 2 minutes.

cooking time: 2 minutes.


ingredients:

1 tablespoon of tahini

1/2 squeeze lime

1 tablespoon of biona olive oil mayonnaise

1/2 teaspoon of smoked paprika

S+P

1 tablespoon of warm water


  • Place all of your ingredients into a small pot and stir well.

  • Once the rest of your meal is cooked and ready to serve, drizzle your sauce over the top and finish with a squeeze of lime and a sprinkling of smoked paprika.
