vegan burger.

dietary: dairy-free, gluten-free, low FODMAP, SIBO friendly, pescatarian, keto, vegan and vegetarian.

prep time: 15 minutes.

cooking time: 30 minutes.


ingredients:

1 diced spring of spring onion

2 tablespoons of sun-dried tomatoes

1 lemon

2 tablespoons of chestnuts

2 tablespoon of walnuts

2 tablespoons of flaxseed

2 tablespoons of almond flour

1 tablespoon of coconut flour

1 tablespoon of smoked paprika

1/2 tablespoon of cumin

1/2 tablespoon of oregano

1/2 tablespoon of coconut aminos OR tamari sauce

1 tablespoon of garlic oil

sesame oil


  • Add 1/2 tablespoon of sesame oil into a frying pan and place on a medium heat.

  • Meanwhile, pop all your dry ingredients into a blender and wiz for 2-3 minutes.

  • Once blended, add in the spring onion and sun-dried tomatoes and blend again for a further 1-2 minutes.

  • Next, place the mix into a large Bown along with the garlic oil and coconut aminos.

  • Mould you mix into patties, place onto a plate and sprinkle with coconut flour.

  • Once your patties are made, place them into the pan and cover with a lid for 7 minutes.

  • Check on your patties after the 7 minutes is up, flip and cover for a further 7 minutes.

  • Once the patties are browned on both sides they’re ready to eat!


krispy keto fries.

prep time: 5 minutes.

cooking time: 15 minutes.


ingredients:

1 aubergine

1 tablespoon of coconut flour

1 tablespoon of almond flour

1 teaspoon of smoked paprika

1 teaspoon of cumin

1 teaspoon of oregano

garlic olive oil

  • Chop your aubergines into fry shapes, place onto a plate and sprinkle with salt. Make sure all the salt is rubbed into the fries as this removes the moisture - which makes them crispy!

  • Meanwhile, pre-heat the oven to 250.

  • Whilst the oven is heating, add your dry ingredients into a bowl and mix well using a fork.

  • After about 5-10 minutes rub in 1 tablespoon of garlic olive oil into your fries.

  • Next, sprinkle on your dry ingredients - make sure each fry is well covered.

  • Then, place your fries onto a tray and pop into the oven for 10 minutes.

  • After 10 minutes check on your fries, shake them about and pop them back into the over for another 5-10 minutes (check after 5 - if they’re looking brown and crispy they’re ready to eat!)

ingredients:

2 tablespoons of biona olive oil mayonnaise

1/2 teaspoon of smoked paprika

1 lemon wedge

1/2 teaspoon of truffle oil

1/2 teaspoon of garlic oil

  • Add all your ingredients (apart from the lemon wedge) into a ramekin.

  • Next, squeeze in the juice from the lemon wedge and mix well.

  • Serve on the side with your fries!
